Experienced (which is normal mode, the intended experience) uses the full ruleset and all maps and missions are available. Intermediate also has simplified rules but you can play on all maps and with more missions. The "beginner vs beginner" has simplified rules, easy maps and only 4 missions. Also to add, the game has 3 different difficulties you can play at.
